soup.

last night for dinner we had curry soup, which has become one of my favorite things ever. the recipe comes from this place (my favorite restaurant). we first had it after thanksgiving with leftover turkey, but chicken is great too (i like to use the costco canned chicken and this soup is ready to go in no time). its really mild as far as curry goes, so dont be afraid, because its so good and easy! its a creamy and hearty soup.

2 cups water
3 carrots peeled and chopped
3 ribs diced celery
1/2 cup diced green onion
1 teaspoon curry powder
2 1/2 tablespoons chicken boullion granules
1/4 teaspoon cayenne pepper
2 cups turkey
(or chicken)
2 cups cream (i have used half and half and buttermilk and both work just as well)
1/2 cup butter
1/2 cup flour

in a large pot combine water and vegetables. bring to a boil and reduce to medium-low until vegetables are soft. add seasonings. add turkey (or chicken). meanwhile, in a separate saucepan melt the butter, once melted slowly add the flour. stir constantly and slowly add the cream, continuing to stir. heat, but don't boil. add roux (butter, flour, cream mixture) slowly to turkey (or chicken) and veggies. heat thoroughly, add salt and pepper to taste.

we always eat bread with it, but if you're super ambitious you could make some naan or toasted pita chips, which would be great. or you could just buy some from a fancy store like yokes or good earth.

Ok Martha!! I love your recipe posts. We need this hearty soup because we're all sick and coldy. Sound as though it will warm us up all the way through.

I did it! It was lovely and warm. My child that freaks about at anything spicy was even happy.
